Christmas appetizer – Toasted brioche rounds, smothered with cranberry sauce, melty brie, topped with crispy smoked bacon and rocket.

Yet again it’s been a while since my last post as I have been busy renovating my house, but this weekend I finally had some down time to work on the creation below which I have had on my mind for some time.

Being that Christmas is almost 6 weeks ish away now, I have been wanting ideas for appetizers to serve to my friends and colleagues for all of the upcoming festive gatherings and these toasts are the perfect quick and tasty answer!

Cheese and bacon… I mean what is not to love there right?

They take minimal time to prep and put together and can also be made in stages so that you can take all of the pre prepped ingredients and put them together 5 mins before serving if needed.

Ingredients: –
4 slices of brioche bread
Round of brie
2/3 slices of streaky bacon smoked
Pot of cranberry sauce
4 Rocket leaves

Tools: –
Chef’s ring a little smaller than the bread or an upturned glass and sharp knife if you do not have a chef’s ring

Method: –

Pan fry bacon slices until nice and crispy and remove from the pan onto a couple of paper towels to soak up the grease and pat dry, leave these on the side until required.

Using a chef’s ring, cut each slice of bread into rounds.  If you don’t have a chefs ring then you could use the top of a glass as a template to cut around using a sharp knife.

Place bread rounds onto a grill rack and place under your grill on a medium heat and toast both sides until lightly browned.  Brioche tends to toast very quickly so keep a sharp eye on them as you don’t want them burnt…

Once toasted, remove and spread a layer of cranberry sauce on each round.  This is personal preference here as to how much you want to use but I go for a thin ish later myself.

Cut the bacon slices into strips and then half.  Slice the brie into strips that will fit on your toasts and place one on each round, top with bacon slices as per the picture and garnish with a single leaf of rocket.

Sprinkle with a tiny bit of freshly cracked pepper to taste and serve.
